Ingredients
  

  • 2 large flour tortillas
  • 3 large eggs
  • 3 slices of bacon or ham
  • 60 g shredded cheddar cheese
  • ½ small onion, diced
  • ½ red bell pepper, diced
  • 10 g butter or oil for frying
  • Salt and pepper, to taste
  • Salsa or avocado slices (for serving)

Method
 

  1. Cook the bacon: In a pan over medium heat, cook bacon until crispy. Remove and set aside.

  2. Sauté the veggies: In the same pan, add diced onion and bell pepper. Cook for 2–3 minutes until softened.

  3. Scramble the eggs: Whisk eggs with milk, salt, and pepper. Pour into the pan and stir gently until just cooked.

  4. Assemble the quesadilla: Place a tortilla in a clean pan. Add half the cheese, the scrambled eggs, bacon pieces, and top with more cheese. Cover with the second tortilla.

  5. Toast until golden: Cook for 1–2 minutes on each side until golden brown and crispy. Slice into quarters and serve hot with salsa or avocado.

Notes

  • For a vegetarian version, skip the bacon and add spinach or mushrooms.
