Step 1 — Prep the chicken: Slice chicken into thin cutlets or strips. Season with salt, pepper, garlic powder, and paprika.
Step 2 — Bread the chicken: Set up breading station: flour, eggs, breadcrumbs + Parmesan. Coat chicken: flour → egg → breadcrumbs.
Step 3 — Cook until crispy: Pan-fry in hot oil 3–4 minutes per side until golden and cooked through (74°C/165°F). Drain on paper towels.
Step 4 — Make Caesar salad filling: In a large bowl combine chopped romaine, Caesar dressing, shaved Parmesan, and croutons (and tomatoes if using). Toss lightly.
Step 5 — Assemble wraps: Warm tortillas slightly. Add Caesar salad filling in the center. Slice crispy chicken and add on top. Add extra Parmesan if desired.
Step 6 — Wrap + serve: Fold sides in, roll tight. Slice in half and serve immediately (best while chicken is crunchy).
