  • 4 bone-in chicken thighs or drumsticks
  • 4 medium potatoes cut into wedges
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • juice of 1 large lemon
  • zest of 1 lemon
  • Seasoning:
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • Optional Garnish:
  • fresh parsley
  • lemon slices

Method
 

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Prepare the potatoes: Place potato wedges in a large baking dish.

  3. Season the chicken: In a bowl mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, pepper, and paprika.

  4. Assemble: Add chicken and potatoes to the baking dish and pour the lemon mixture over everything. Toss lightly to coat.

  5. Bake: Bake for 40–45 minutes until chicken is golden and potatoes are tender.

Notes

  • Use Yukon gold potatoes for best texture.
