- Prepare the noodles: Boil rice noodles according to the package instructions. Drain, rinse with cold water, and set aside.

- Make the sauce: In a bowl, mix soy sauce, sesame oil, honey, and rice vinegar. Stir until combined.

- Stir-fry the aromatics: Heat a wok over medium heat. Add a bit of sesame oil, then sauté garlic and chili until fragrant (about 30 seconds).

- Add vegetables: Add carrots and bell pepper, stir-fry for 2–3 minutes until just tender.

- Combine everything: Add the noodles and sauce to the wok. Toss well until coated and heated through.

- Garnish and serve: Top with green onions, coriander, and crushed peanuts. Serve warm with an optional squeeze of lime juice.

Notes
Adjust spice level to taste — add more chili flakes or sriracha for extra heat.
For a protein boost, add tofu, shrimp, or chicken.
These noodles are also delicious served cold as a Thai noodle salad.
