  • Crust:
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • Cheesecake Filling:
  • 16 oz 450 g cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • Strawberry Topping:
  • 2 cups fresh or frozen strawberries chopped
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

Method
 

  1. Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the lined baking pan.

  2. Bake crust: Bake at 350°F (180°C) for 10 minutes. Set aside.

  3. Prepare cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
